Recipe - Mix 'n' match curry

Quick, flexible, and tasty

A curry is all about big taste with minimal effort. Prep it once then switch it up throughout the week with whatever you’ve got.

1. Prep it!

Taking just a little time to prep can save you loads later in the week.

Base ingredients: Start by frying an onion, some garlic, and ginger until golden, add your spices or curry powder, paste or sauce. Throw in your protein - meat, lentils, or tofu - then pour in a can of tinned tomatoes and/or coconut milk. Boost the base with stock, tomato purée or yoghurt for extra depth and richness.

A curry is perfect for boosting with extras like meat or fish, carrots, peppers, mushrooms, spinach, cauliflower or beans. Roasted pumpkin or squash add warmth and depth, while apple or mango bring a natural hint of sweetness.

Classic with rice - Or swap with brown rice or quinoa for a nutritious twist

Rolled in flatbreads - Naan, roti, chapati paratha or tortilla all work. Add pickle or chutney for extra zing

Piled on jacket potato - Topped with yoghurt or coconut cream and chopped herbs

Mixed into noodles - For a speedy, filling midweek fix

Curry toastie - Layer with cheese and grill for the ultimate comfort bite

3. Recycle it!

Whatever way you serve your chilli, don’t forget the last step: Recycle what can’t be eaten! Those veggie stalks, inedible peelings and bones go straight into your food waste caddy.
